Looks like peppermint syrup:-), but it is not. Our first pressing olive oil from October 18th, 2018. We first harvest the driest part of the Campo, as the olives are ripe there first. Anyone who has seen the little brown olives crunched by the great dryness of this year can hardly believe what comes out there for a fresh bright green olive oil.
